I've spotted so many little recipes recently online and in magazines for refreshing, fruity summer drinks and they all look so delicious! I think they add a special touch to barbecues and summer parties. I decided to make a classic homemade lemonade and a fresh watermelon and raspberry juice.

Homemade Lemonade:
1 cup of sugar
1 cup of water
The juice of 6 large lemons (plus a few slices to garnish)
A few mint leaves

Bring the sugar and water to boil in a saucepan. Stir until the sugar dissolves and leave to cool completely.
Put the syrup, juice and 4 cups of cold water into a large jug and mix.
Serve over ice and a lemon slice.

Watermelon and Raspberry Cooler:
Half a large watermelon
200g raspberries
2 tbsp caster sugar
Handful mint leaves
Sparkling water

Put the sliced watermelon, raspberries, sugar and mint into a blender and blitz until smooth. Pass the mixture through a sieve to remove pips.
Pour into a jug over ice and top up with sparkling water. Garnish with a few mint leaves.

Enjoy!
